The Wüsthof Gourmet carving knife is, because of its 26 cm long blade, perfect when cutting small and medium-sized pieces of meat. You can easily slice ham or roast beef into thin, equal slices. This is also called tranching. This is possible with a chef’s knife, but with a carving knife you can cut even thinner slices, often because the blade is narrower. You can also use this knife to cut vegetables and fish.
