The Wüsthof Gourmet carving knife is, because of its 32 cm long blade, perfect when cutting parge pieces of meat. You can easily slice ham or roast beef into thin, equal slices. This is also called tranching. This is possible with a chef’s knife, but with a carving knife you can cut even thinner slices, often because the blade is narrower.
